Production: Zero dosage. Fermented in barrels, concrete egg and stainless steel, with an elevage of 12+ months for the base wine, followed by > 2 years on lees.

Tasting: Beautifully structured, with a hint of nutty brioche and beeswax on the nose, and a palate of red apple and citrus peel. Crisp, refreshing finish.

Pairing: Works well with sea inspired platters, creamy pasta dishes, garlic and stewed mushrooms - or simply on its own.
